2cupscooked white ricecooled
1poundboneless, skinless chicken breastcut into 1-inch pieces
In a small bowl, whisk together the mayonnaise, sweet chili sauce, and sriracha until smooth. Set aside.
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook for 5-7 minutes, stirring occasionally, until golden brown and cooked through. Remove the chicken and set aside.
