Ingredients

  • 1 cup cooked beets, peeled and diced
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 1 frozen banana, peeled
  • 1/2 cup plain Greek yogurt
  • 1/2 cup unsweetened almond milk
  • 1 tbsp honey
  • 1 tsp fresh lemon juice
  • 1/2 tsp ground cinnamon

Equipment

  • high-powered blender
  • serving glasses
  • measuring cups and spoons
  • cutting board and knife

Method

  1. Add the cooked beets, mixed berries, frozen banana, and Greek yogurt to a high-powered blender.
  2. Pour in the almond milk, honey, and lemon juice. The lemon’s zing cuts through the earthiness beautifully!
  3. Sprinkle in the ground cinnamon—it adds a cozy depth that’ll make you swoon.
  4. Blend on high for 30–45 seconds, scraping the sides if needed, until silky smooth.
  5. Add more honey if desired, or a splash of almond milk for a thinner texture.
  6. Pour into glasses and serve immediately. Enjoy that gorgeous color!

Swap berries for cherries, use coconut yogurt for dairy-free, or skip honey for a lower glycemic load. Store extras in popsicle molds for a fun treat!
