Ingredients

  • 1 1/2 pounds ground beef 80% lean, 20% fat
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 4 hamburger buns split
  • 1 tablespoon unsalted butter softened
  • Optional toppings lettuce, tomato, onion, pickles, cheese

  1. Preheat a grill or large skillet over medium-high heat until hot, about 5 minutes.
  2. In a large bowl, gently mix the ground beef, salt, black pepper, garlic powder, and onion powder until just combined. Avoid overmixing to keep the burgers tender.
  3. Divide the mixture into 4 equal portions and shape each into a 3/4-inch-thick patty. Press a small indentation into the center of each patty to prevent puffing during cooking.
  4. Place the patties on the hot grill or skillet and cook for 4 to 5 minutes on one side, until browned and slightly charred. Flip and cook for another 3 to 4 minutes for medium doneness, or until the internal temperature reaches 160°F.
  5. While the patties cook, spread the softened butter on the cut sides of the buns. Toast the buns on the grill or skillet for 1 to 2 minutes, until golden brown.
  6. Assemble the burgers by placing each patty on the bottom bun and adding your desired toppings. Cover with the top bun and serve immediately.
