Ingredients

  • 1 pound ground beef (80/20 blend recommended)
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 8 small flour tortillas (6-inch size)
  • 1/2 cup shredded iceberg lettuce
  • 1/4 cup finely chopped white onion
  • 1/4 cup dill pickle slices, chopped
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup shredded American cheese
  • 1/4 cup Thousand Island dressing

  1. Heat a large skillet over medium heat. Add the ground beef and season with salt, pepper, garlic powder, and onion powder. Cook, breaking it into small crumbles with a wooden spoon, until fully browned and no pink remains, about 6-8 minutes. Drain any excess grease and set aside.
  2. Warm the flour tortillas in a dry skillet over medium heat for 15-20 seconds per side until soft and pliable. Alternatively, wrap them in a damp paper towel and microwave for 20-30 seconds.
  3. Assemble the tacos by placing a portion of the cooked beef into the center of each tortilla. Sprinkle evenly with shredded cheddar and American cheeses.
  4. Top the beef and cheese with shredded lettuce, chopped onion, and chopped pickles.
  5. Drizzle 1 tablespoon of Thousand Island dressing over each taco. Fold the tortillas gently in half to close, pressing lightly to hold the filling in place. Serve immediately.
