Heat the olive oil in a large cast iron skillet or heavy-bottomed pan over medium-high heat until it shimmers and is very hot, about 2 minutes.
Carefully add the seasoned steak bites to the hot skillet in a single layer, making sure not to overcrowd the pan. Sear for 2-3 minutes without moving them to develop a deep brown crust.
Flip the steak bites and continue cooking for another 2-3 minutes for medium-rare, or until they reach your desired level of doneness. Use tongs to transfer the cooked steak to a clean plate.
Reduce the heat to low and add the butter to the same skillet. Once melted, add the minced garlic and cook for 1 minute, stirring constantly, until fragrant.
Remove the skillet from the heat and stir in the fresh parsley and lemon juice. Immediately pour the garlic butter sauce over the plated steak bites and toss to coat thoroughly before serving.
