Method
Wash and prep the celery and apples, removing any dirt or stems. Chop into 1-inch pieces.
Add chopped celery, apples, lemon juice, and cold water to a high-powered blender.
Strain the mixture through a fine-mesh sieve or nut milk bag. Press to extract all juice.
Taste and stir in honey if additional sweetness is desired.
Serve over ice or refrigerate in a sealed jar for up to 24 hours. Shake well before drinking.
