Make homemade chai granola with almonds and warm spices. This crunchy, maple-sweetened granola is perfect with yogurt or milk for an easy breakfast.

Ingredients

  • 3 cups old-fashioned rolled oats
  • 1 cup raw almonds, roughly chopped
  • 1 cup unsweetened shredded coconut
  • 1/2 cup pure maple syrup
  • 1/4 cup coconut oil, melted
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp ground cardamom
  • 1/2 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • 1/2 tsp kosher salt
  • 1/2 cup dried cranberries

  1. Preheat the oven to 325°F and line a large baking sheet with parchment paper.
  2. In a large mixing bowl, combine the oats, almonds, and shredded coconut.
  3. In a small bowl, whisk together the maple syrup, melted coconut oil, cinnamon, ginger, cardamom, cloves, nutmeg, and salt until well blended.
  4. Pour the spice mixture over the dry ingredients and mix thoroughly until everything is evenly coated.
  5. Spread the mixture onto the prepared baking sheet in an even layer. Bake for 25-30 minutes, stirring halfway through, until the granola is golden brown and fragrant.
  6. Remove from the oven and let cool completely on the baking sheet. Once cooled, stir in the dried cranberries and store in an airtight container.
