Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.
Heat the olive oil in a large skillet over medium heat. Add the ground beef and season with salt, pepper, onion powder, and garlic powder. Cook, breaking it into small crumbles until browned and fully cooked, about 8 minutes. Drain any excess fat.
Add the diced onion to the skillet with the beef and cook for 3–4 minutes, stirring occasionally, until softened. Stir in the diced pickles and cook for 1 minute.
