Ingredients

  • 2 pounds chicken drumsticks
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder

Method

  1. Preheat your oven to 400°F (200°C) and line a large, rimmed baking sheet with aluminum foil for easy cleanup.
  2. Pat the chicken drumsticks completely dry with paper towels; this will help the skin get crispy during baking.
  3. In a large bowl, toss the dried drumsticks with the olive oil until they are evenly coated.
  4. Sprinkle the salt, black pepper, garlic powder, smoked paprika, and onion powder over the drumsticks, then toss again to ensure each piece is thoroughly seasoned.
  5. Arrange the drumsticks in a single layer on the prepared baking sheet, making sure they are not touching.
  6. Bake for 35-45 minutes, flipping the drumsticks halfway through the cooking time, until the skin is golden brown and crispy and the internal temperature reaches 165°F (74°C) when measured with a meat thermometer.
