Ingredients

Chicken and Coating
  • 1 pound boneless, skinless chicken breasts cut into 1-inch pieces
  • 1/2 cup all-purpose flour
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 large egg
  • 2 tbsp milk
  • 1 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup vegetable oil for frying

Equipment

Method

  1. In a shallow bowl, whisk together the flour, garlic powder, onion powder, smoked paprika, salt, and black pepper. Set aside.
  2. In a separate shallow bowl, beat the egg and milk together until fully combined.
  3. In a third shallow bowl, mix the panko breadcrumbs and grated Parmesan cheese.
  4. Dredge each piece of chicken in the flour mixture, shaking off excess. Dip it into the egg mixture, then coat evenly with the breadcrumb mixture. Place the coated chicken pieces on a plate.
  5. Heat the vegetable oil in a large skillet over medium heat. Fry the chicken nuggets in batches for 3-4 minutes per side, or until golden brown and cooked through, with an internal temperature of 165°F.
  6. Transfer the cooked nuggets to a paper towel-lined plate to drain excess oil. Serve warm.
