Ingredients

Marinade
  • 1/4 cup olive oil
  • 1/4 cup lemon juice freshly squeezed
  • 2 tbsp garlic minced
  • 1 tbsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
Chicken
  • 1.5 lbs boneless, skinless chicken breasts cut into 1-inch cubes

Method

  1. In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper to make the marinade.
  2. Add the chicken cubes to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
  3. Preheat grill to medium-high heat. Thread the marinated chicken onto skewers.
  4. Grill the chicken skewers for 8-10 minutes, turning occasionally, until fully cooked and internal temperature reaches 165°F (74°C).
  5. Serve hot with pita bread, tzatziki sauce, and fresh vegetables.
