Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 2 large eggs at room temperature
  • 1 3/4 cups whole milk
  • 1/4 cup unsalted butter melted and slightly cooled
  • 1 teaspoon vanilla extract
  • 1 1/2 cups semisweet chocolate chips
  • Additional butter or oil for greasing the skillet

Equipment

Method

  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  2. In a separate medium bowl, beat the eggs, then whisk in the milk, melted butter, and vanilla extract until fully incorporated.
  3. Pour the wet ingredients into the dry ingredients and stir gently with a wooden spoon until just combined with some lumps remaining, being careful not to overmix.
  4. Gently fold in the chocolate chips until evenly distributed throughout the batter.
  5. Heat a nonstick skillet or griddle over medium heat and lightly grease with butter or oil.
  6. Pour 1/4 cup portions of batter onto the hot skillet, cooking until bubbles form on the surface and edges look set, about 2-3 minutes.
  7. Flip pancakes and cook until golden brown on the second side and cooked through, about 1-2 minutes more.
  8. Transfer cooked pancakes to a plate and repeat with remaining batter, greasing the skillet as needed between batches.
