Ingredients

  • 1.5 cups cottage cheese (full-fat, small curd)
  • 2 cups fresh strawberries, hulled and halved
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice
  • 1 cup cold heavy whipping cream
  • 2 tbsp powdered sugar

Equipment

  • hand mixer or stand mixer to whip the cream
  • spatula for folding

Method

  1. Place the cottage cheese in a food processor or blender and blend until completely smooth, about 1 to 2 minutes. Scrape down the sides as needed.
  2. Add the strawberries, granulated sugar, vanilla extract, and lemon juice to the blender. Blend again until the mixture is silky and well combined.
  3. In a separate mixing bowl, whip the cold heavy whipping cream with the powdered sugar using a hand mixer or stand mixer until soft peaks form, about 3 to 4 minutes.
  4. Gently fold the whipped cream into the strawberry-cottage cheese mixture using a spatula. Take your time to keep the mousse light and airy.
  5. Divide the mousse into serving dishes or glasses, smoothing the tops.
  6. Chill in the refrigerator for at least 1 hour to set and develop flavor.
  7. Optional: Garnish with fresh strawberry slices or a sprig of mint before serving.

Notes

Make sure your strawberries are ripe for best flavor. You can substitute frozen berries—just thaw and drain. For a dairy-free version, use coconut whipped cream and plant-based cottage cheese. Chill at least 1 hour for the mousse to set properly.
