Ingredients

  • 1.5 pounds ground beef 80% lean
  • 2 tablespoons unsalted butter
  • 2 large yellow onions thinly sliced
  • 1 teaspoon granulated sugar
  • 1 teaspoon kosher salt
  • 0.5 teaspoon black pepper freshly ground
  • 1 tablespoon all-purpose flour
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 4 slices provolone cheese
  • 4 brioche burger buns split and lightly toasted
  • 0.25 cup grated Gruyère cheese
  • 1 tablespoon fresh parsley chopped

Method

  1. In a large skillet over medium heat, melt the butter. Add the sliced onions, sugar, salt, and pepper. Cook, stirring occasionally, for 20-25 minutes until the onions are deeply caramelized and golden brown.
  2. Push the onions to one side of the skillet and add the ground beef. Break it apart with a wooden spoon and cook for 5-7 minutes until no pink remains. Drain excess fat if needed.

  3. Sprinkle the flour over the beef and onions, stirring to coat evenly. Cook for 1 minute to remove the raw flour taste.
  4. Pour in the beef broth, Worcestershire sauce, and Dijon mustard. Stir well and simmer for 5-7 minutes until the mixture thickens slightly.
  5. Preheat the broiler to high. Divide the beef mixture among the toasted buns, then top each with a slice of provolone and a sprinkle of Gruyère.
