  • 1 pound ground beef 80/20 blend recommended
  • 1 tsp kosher salt
  • 1/2 tsp black pepper freshly ground
  • 1 package refrigerated biscuit dough 8 count, such as Pillsbury Grands
Garlic Parmesan Sauce
  • 4 ounces cream cheese softened at room temperature
  • 1/4 cup mayonnaise
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic minced
  • 2 tbsp unsalted butter melted
  • 1 tbsp fresh parsley finely chopped

Method

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, combine the ground beef, kosher salt, and black pepper, then form into 8 equal-sized meatballs, each about 1.5 inches in diameter.
  3. Flatten each biscuit dough round into a 4-inch circle, place one meatball in the center, and wrap the dough around it, pinching the seams to seal completely into a smooth ball.
  4. Arrange the sealed bombs seam-side down on the prepared baking sheet, spacing them 2 inches apart, and bake for 18-20 minutes until the biscuits are golden brown and the meat is cooked through.
  5. While the bombs bake, mix the softened cream cheese, mayonnaise, grated Parmesan, and minced garlic in a small bowl until smooth and fully combined.
  6. Brush the hot baked bombs with melted butter immediately after removing them from the oven, then dollop each with a tablespoon of the garlic Parmesan sauce and sprinkle with chopped parsley before serving.
