Method
Heat olive oil in a skillet over medium heat. Add diced onion and cook until softened, about 5 minutes.
Add minced garlic and cook for another minute until fragrant.
Stir in crushed tomatoes, oregano, salt, and black pepper. Simmer for 10 minutes.
Make small wells in the tomato sauce and crack eggs into them. Cover and cook until eggs are set, about 5-7 minutes.
Sprinkle with crumbled feta cheese and chopped parsley before serving.
Notes
Serve with crusty bread for a complete meal.
