Ingredients

  • 1 lb boneless skinless chicken breasts, cut into 1-inch cubes
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 zucchini, sliced into 1/2-inch thick rounds
  • 1 red onion, cut into wedges
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 0.5 tsp smoked paprika
  • salt and black pepper to taste
  • 4 whole wheat burger buns
  • 1 large avocado, sliced
  • 2 cups fresh baby spinach
  • 1 cup cherry tomatoes, halved
  • 0.25 cup crumbled feta cheese (optional)

Method

  1. In a bowl, whisk olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper. Add chicken and marinate for 30 minutes in the fridge.
  2. Thread chicken, bell pepper, zucchini, and red onion onto skewers. Preheat grill to medium-high heat.
  3. Grill skewers for 10–12 minutes, turning occasionally, until chicken is cooked and vegetables are tender.
  4. Lightly toast the whole wheat buns on the grill for 1–2 minutes until golden and crisp.
  5. In a bowl, combine spinach, cherry tomatoes, and avocado. Drizzle with olive oil, season, and toss gently.
  6. Serve grilled skewers with salad and toasted buns for a balanced meal.
  7. Sprinkle feta cheese over the salad or inside the bun for extra flavor.
  8. Serve immediately while warm and fresh.

Notes

Use lettuce wraps instead of buns for a gluten-free version. Double the marinade for use as salad dressing. Swap feta with goat cheese or omit for dairy-free. Tofu or shrimp make excellent substitutions for the chicken. Store salad and chicken separately for freshness.
