Ingredients

  • 1.5 cups rolled oats
  • 0.5 cup natural peanut butter (creamy, room temp)
  • 0.33 cup honey
  • 0.25 cup mini dark chocolate chips
  • 0.25 cup ground flaxseed
  • 0.5 tsp vanilla extract
  • 0.125 tsp salt
  • 0.33 cup unsweetened shredded coconut (optional, for rolling)

Equipment

  • mixing bowl for combining ingredients
  • rubber spatula or spoon for mixing
  • cookie scoop (optional) for even bite sizes
  • refrigerator to chill the mixture

Method

  1. In a large mixing bowl, combine the rolled oats, ground flaxseed, and salt.
  2. Add the peanut butter, honey, and vanilla extract. Stir with a sturdy spoon or rubber spatula until the mixture is thick and well combined.
  3. Fold in the mini dark chocolate chips until evenly distributed.
  4. Cover and chill the mixture in the refrigerator for at least 30 minutes — this makes it easier to roll.
  5. Once chilled, scoop out about 1 tablespoon of the mixture and roll into a compact ball using your hands.
  6. Optional: Roll each ball in shredded coconut for added texture and flavor.
  7. Store in an airtight container in the refrigerator for up to 1 week or freeze for up to 2 months.
  8. Let sit at room temperature for a few minutes before eating if stored in the freezer for best texture.

Notes

Feel free to swap peanut butter with almond or sunflower seed butter for allergy-friendly options. If adding protein powder, reduce oats slightly to maintain consistency. Keep them chilled for best texture.
