Method
Preheat the oven to 400°F and line a baking sheet with parchment paper.
In a large bowl, toss the carrot slices with olive oil until evenly coated.
Spread the carrots in a single layer on the prepared baking sheet.
Roast the carrots for 15 minutes, stirring halfway through, until they begin to soften and brown slightly.
In a small bowl, whisk together the honey, balsamic vinegar, salt, and pepper.
Remove the carrots from the oven and drizzle the honey balsamic mixture over them, tossing to coat evenly.
Return the carrots to the oven and roast for an additional 5-7 minutes, until tender and caramelized.
