Ingredients

  • 1 bunch kale, stems removed and leaves finely chopped
  • 1/4 cup extra-virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp honey
  • 1/4 tsp kosher salt
  • 1/8 tsp freshly ground black pepper
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup toasted almonds, roughly chopped

  1. In a large mixing bowl, combine the olive oil, lemon juice, honey, salt, and pepper. Whisk vigorously until the mixture is fully emulsified and smooth.
  2. Add the chopped kale to the bowl with the dressing. Use your hands to massage the kale for 2-3 minutes, until the leaves soften and darken slightly.
  3. Sprinkle the grated Parmesan cheese over the kale and toss gently to distribute evenly. Scatter the toasted almonds over the salad, reserving a few for garnish if desired.
  4. Serve immediately or let the salad sit for 10 minutes to allow the flavors to meld.
