Ingredients

  • 200 g all-purpose flour
  • 100 g granulated sugar
  • 100 g unsalted butter, melted
  • 2 large eggs, room temperature
  • 120 ml whole milk, room temperature
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1 pinch salt
  • 50 g chocolate chips (optional)
  • 2 tbsp rainbow sprinkles (optional, for decoration)

Method

  1. Preheat your oven to 350°F (180°C) and prepare a muffin tin or individual molds with liners or a light greasing.
  2. In a large bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, beat the eggs with the sugar until pale and slightly frothy, about 2 minutes.
  4. Add the melted butter, vanilla, and milk to the egg mixture and mix until smooth.
  5. Gently fold in the dry ingredients using a spatula. Do not overmix.
  6. If using, gently fold in the chocolate chips.
  7. Divide the batter evenly into the molds, filling each about 3/4 full. Sprinkle rainbow sprinkles on top if desired.
  8. Bake for 20–25 minutes, or until the tops are golden and a toothpick comes out clean. Let cool before serving.

Notes

Try swapping the vanilla extract for almond for a new twist. For a healthier version, replace part of the flour with whole wheat, or use applesauce in place of some sugar. These little cakes also freeze well for future treats.
