This refreshing lemon ginger tonic combines zesty lemon, warming ginger, and soothing honey into a vibrant, invigorating drink perfect for mornings, post-workout hydration, or a soothing afternoon sip.

Ingredients

  • 1 cup freshly squeezed lemon juice
  • 1/4 cup honey, or to taste
  • 1 tbsp finely grated fresh ginger
  • 4 cups cold water
  • 1 cup ice cubes
  • fresh mint leaves, for garnish (optional)

Method

  1. In a small saucepan, combine the honey and grated ginger with 1/2 cup water. Heat over medium-low, stirring until the honey dissolves, about 2 minutes. Remove from heat and let steep for 10 minutes.
  2. Strain the ginger-infused syrup through a fine-mesh sieve into a pitcher, pressing on the ginger to extract all the flavor. Discard the solids.
  3. Add the freshly squeezed lemon juice to the pitcher and stir well.
  4. Pour in the remaining 3 1/2 cups cold water and stir to combine. Taste and adjust sweetness with more honey if needed.
  5. Fill glasses with ice, pour the tonic over, and garnish with fresh mint leaves if desired. Serve immediately.
