Method
Add coconut water, pineapple, cucumber, mint leaves, lime juice, and ginger to a high-speed blender.
Blend on high for about 45–60 seconds, or until smooth and fully combined.
Pour the mixture through a fine-mesh strainer if you prefer a smoother texture, pressing to extract juice.
Stir in chia seeds and let the drink sit for 5–10 minutes to allow the seeds to soften and swell slightly.
Fill a glass with ice cubes and pour the drink over the ice.
Garnish with extra mint or a pineapple wedge if desired, and serve immediately.
