Ingredients

  • 1 1/2 cups cold coconut water
  • 1/2 cup chopped fresh pineapple
  • 1/2 cup chopped cucumber, peeled
  • 1/4 cup fresh mint leaves
  • 1 tbsp fresh lime juice
  • 1 tsp grated fresh ginger
  • 1/2 tsp chia seeds
  • ice cubes, for serving

Method

  1. Add coconut water, pineapple, cucumber, mint leaves, lime juice, and ginger to a high-speed blender.
  2. Blend on high for about 45–60 seconds, or until smooth and fully combined.
  3. Pour the mixture through a fine-mesh strainer if you prefer a smoother texture, pressing to extract juice.
  4. Stir in chia seeds and let the drink sit for 5–10 minutes to allow the seeds to soften and swell slightly.
  5. Fill a glass with ice cubes and pour the drink over the ice.
  6. Garnish with extra mint or a pineapple wedge if desired, and serve immediately.

Notes
