Ingredients

  • 1 cup fresh pineapple chunks
  • 1/2 cup unsweetened pineapple juice
  • 1/4 cup chilled coconut water
  • 1 tbsp fresh lime juice
  • 1 tsp honey (optional)
  • 1/4 tsp grated fresh ginger
  • 1/2 cup ice cubes
  • 1 tsp chia seeds (optional)

Equipment

Method

  1. Add the pineapple chunks, pineapple juice, coconut water, lime juice, honey, and grated ginger to a blender.
  2. Blend on high for 30–45 seconds until smooth and frothy.
  3. Taste and adjust sweetness with a little more honey, if needed.
  4. Add the ice cubes and blend again until the drink is cold and slushy.
  5. If using, stir in the chia seeds and let sit for 2–3 minutes to soften slightly.
  6. Pour into a tall glass and serve immediately with a straw.
