Ingredients

  • 6 cups Rice Krispies cereal
  • 10 ounces marshmallows
  • 3 tablespoons unsalted butter
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon vanilla extract
  • 1/4 cup candy corn
  • 1/4 cup green frosting or melted green candy melts

Method

  1. In a large pot, melt the butter over low heat. Once fully melted, add the marshmallows and stir constantly until completely smooth and no lumps remain, about 3-4 minutes.
  2. Remove the pot from heat and stir in the pumpkin pie spice, vanilla extract, and 5-6 drops of orange food coloring until evenly combined and the mixture is vibrant orange.
  3. Quickly fold in the Rice Krispies cereal with a rubber spatula until all the cereal is evenly coated with the marshmallow mixture.
  4. Lightly grease your hands with butter or cooking spray, then shape the mixture into 12 small pumpkin-shaped balls, about 2 inches in diameter each. Place them on a parchment-lined baking sheet.
  5. Press a piece of candy corn into the top of each pumpkin for the stem. Alternatively, pipe a small amount of green frosting or melted green candy melts on top to resemble a stem. Let cool for 20 minutes before serving.
