  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 1 cup ricotta cheese at room temperature
  • 3 large eggs at room temperature
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup powdered sugar for dusting

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan and lightly dust it with flour.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  3. Add the ricotta cheese, eggs, and vanilla extract to the butter mixture and beat until fully combined, about 1-2 minutes.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add to the wet ingredients, mixing until just combined.
  5. Pour the batter into the prepared cake pan and bake for 35-40 minutes, or until a toothpick inserted comes out clean.
  6. Remove the cake from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.
  7. Once the cake is completely cool, dust the top with powdered sugar using a fine-mesh sieve. Slice and serve.
