  • 4 medium sweet potatoes, about 2 pounds total, scrubbed clean and dried
  • 3 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika

  1. Preheat your oven to 425°F (220°C) and line a large, rimmed baking sheet with parchment paper.
  2. Cut the sweet potatoes into 1-inch cubes, aiming for pieces that are roughly the same size so they cook evenly.
  3. In a large bowl, toss the sweet potato cubes with the olive oil, salt, black pepper, garlic powder, and smoked paprika until the cubes are evenly coated.
  4. Spread the seasoned sweet potatoes in a single, uncrowded layer on the prepared baking sheet.
  5. Roast for 20 minutes, then use a spatula to flip and stir the potatoes. Return them to the oven and roast for another 15-20 minutes, or until the potatoes are tender when pierced with a fork and the edges are caramelized and slightly crispy.
