Ingredients

For the Salmon
  • 4 salmon fillets, about 6 ounces each
  • 1 tsp kosher salt
  • 1/2 tsp black pepper, freshly ground
  • 2 tbsp olive oil
For the Salsa
  • 1 cup cherry tomatoes, quartered
  • 1/4 cup red onion, finely chopped
  • 2 tbsp fresh cilantro, chopped
  • 1 jalapeño pepper, seeded and minced
  • 2 tbsp fresh lime juice
  • 1 tbsp olive oil
  • 1/4 tsp kosher salt

Method

  1. Preheat your oven to 400°F and line a baking sheet with parchment paper.
  2. Pat the salmon fillets dry with paper towels, then season both sides evenly with 1 teaspoon kosher salt and 1/2 teaspoon black pepper.
  3. Heat 2 tablespoons olive oil in a large oven-safe skillet over medium-high heat, then place salmon skin-side up and sear for 3-4 minutes until a golden-brown crust forms.
  4. Flip the salmon carefully using a spatula, then transfer the skillet to the preheated oven and bake for 8-10 minutes until the fish flakes easily with a fork.
  5. While the salmon cooks, combine cherry tomatoes, red onion, cilantro, jalapeño, lime juice, 1 tablespoon olive oil, and 1/4 teaspoon kosher salt in a medium bowl to make the salsa.
  6. Remove salmon from oven and let rest for 2 minutes before serving topped with the fresh salsa.
