4boneless, skinless chicken breastsabout 2 pounds total
Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper, then sear in the skillet for 3-4 minutes per side, until golden brown. Transfer chicken to the slow cooker.
In the same skillet, add sliced onions and cook over medium heat for 10 minutes, stirring occasionally, until softened and lightly caramelized. Add minced garlic and thyme, cooking for 1 more minute.
Pour beef broth and white wine (if using) into the skillet, scraping up any browned bits. Bring to a simmer, then pour the mixture over the chicken in the slow cooker.
Cover and cook on low for 6 hours or high for 3 hours, until the chicken is tender and cooked through.
