Ingredients

  • 1 cup frozen pineapple chunks
  • 1 cup frozen mango chunks
  • 1 small ripe banana peeled and sliced
  • 1 cup fresh baby spinach
  • 1/2 cup plain unsweetened coconut water
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon fresh lime juice
  • 1 teaspoon freshly grated ginger
  • 1 tablespoon chia seeds

Method

  1. Combine the frozen pineapple, frozen mango, sliced banana, fresh spinach, coconut water, Greek yogurt, lime juice, and grated ginger in the pitcher of a high-speed blender.
  2. Secure the lid tightly on the blender and blend on high speed for 45 to 60 seconds, using the tamper if necessary to push ingredients into the blades, until the mixture is completely smooth with no visible chunks of fruit or spinach.
  3. Add the chia seeds to the blender and pulse 3 to 4 times, just until the seeds are incorporated throughout the smoothie.
  4. Pour the finished smoothie immediately into two glasses. The consistency should be thick and creamy, but still pourable.
  5. Serve immediately for the best texture and flavor.
